INGREDIENTS FOR 2 PERSONS:
- 220 g homemade tagliatelle (or fusilli/pljukanci – optional)
- 25 g butter
- 1 egg (yolk)
- Parmesan cheese – optional
- cooking cream
- salt
- 60 g of fresh black truffle
- 1 cup of the water in which the pasta was cooked
- olive oil
PREPARATION:
Separate the egg yolk from the egg white. Put the yolk in a bowl, add the Parmesan cheese (optional), some cooking cream and stir. Put the homemade pasta in a pot of boiling salted water and leave to cook for about 4-5 minutes. Meanwhile, melt the butter in a pan over a medium heat. When the butter has melted a bit, grate most of the truffles over it. Add salt, reduce the heat, add the egg yolks with the cooking cream and a little of the water in which the pasta was cooked. Add the pasta and mix well. Add a little more water if necessary. Cook on a low heat for another minute. Finally, grate the rest of the fresh black truffle, drizzle with olive oil and serve on a plate. Enjoy
