INGREDIENTS FOR 2 PERSONS:
- 230 – 250 g homemade gnocchi
- 25 g butter
- Parmesan cheese – optional
- cooking cream
- salt
- 60 g of fresh white truffle
- 1 cup of the water in which the pasta was cooked
- olive oil
PREPARATION:
Put the gnocchi in a pot of boiling salted water. When they float to the surface, cook for a few minutes, save some of the water in which they were cooked, strain them and pour olive oil over them. In the meantime, melt the butter in a pan over a low heat. When the butter has softened slightly, grate half of the fresh truffle over it. Add salt, reduce the heat, add a little cooking cream, a little of the water in which the gnocchi were cooked and, optional, a little Parmesan cheese. Add the gnocchi and mix well. Finally, grate over the rest of the fresh white truffle, drizzle with olive oil and serve on a plate. Enjoy!
