INGREDIENTS FOR 2 PERSONS:
- 220 g homemade tagliatelle
- 25 g butter
- 1 egg (yolk)
- cooking cream
- salt
- 60 g of fresh black truffle
- 1 cup of the water in which the pasta was cooked
- olive oil
PREPARATION:
Separate the egg yolk from the egg white. Put the yolk in a bowl, add a little cooking cream and stir. Grate some of the truffle onto a plate. Put the homemade pasta in a pot of boiling salted water and leave to cook for about 4-5 minutes. Meanwhile, melt the butter in a small pan over a low heat. When the butter has softened a little, add the grated truffle. Add the salt, reduce the heat, stir for 1 minute. Add the egg yolks with the cream and a little of the water in which the pasta was cooked. Then add the pasta and mix everything well. Finally, grate over the rest of the black truffle, drizzle with olive oil and serve on a plate. Enjoy!
